Refrigerator Pickles



I made our first batch of refrigerator pickles today. We planted a bunch of pickling cucumbers just so that we could enjoy this wonderful summer treat.


It seems as if the cucumbers grew overnight! One day there were none, the next there were lots!


This is the recipe I used:

Wash fresh picked cucumbers and quarter into spears. Place in a large jar.

In a saucepan, boil:
6 cups water
1/2 cup sugar
1 cup organic white vinegar

Set aside to cool. Once cool, pour over cucumbers.

Add:

5 organic garlic cloves
organic fresh dill
1 teaspoon mustard seeds

Refrigerate. They should be ready to eat in about five days and will last refrigerated for several months (ours won't last that long).

*I doubled the batch so that there was enough liquid to add more cucumbers along the way.


Once the pickle jar is established, take your fresh picked cucumbers, quarter them into spears, and drop into jar. You'll be able to tell by color (darkest green), which cucumbers have been in the longest and which you'll want to eat first.

Update: After a few rotations of pickles, I found that the flavor had waned so I made a fresh batch of the recipe to refresh the jar.

  12. Good morning Trina.Boy those pickles look yummy. I live half an hour away from a wonderful farm in New Hampshire that sells pickling cukes ,but it is gong to be a scorcher today and will have to try your recipe tomorrow.Enjoy your day and remember to keep those feet up.

    This is a much simpler recipe than the one I've been using. I will for sure give this a try this afternoon - our cucumbers seem to be taking over the garden!

  15. I'll have to try that recipe. We make a similiar one called cucumbers & onions. It is the same vinegar mixture but poured over sliced cucumbers and onions while hot. They never last long. Thanks for sharing!

I have a jar just like that sitting on my counter just waiting for some cucumbers...now I just need to make room in the fridge!   30. What a clever way to make pickles without having to can them! I like that you can continually add to the jar, which...by the way...is such a pretty jar! I don't know if you're like me, but things always taste better coming from a pretty jar. ;) I recently transferred my homemade granola to a pretty glass container and it is twice as much fun to eat breakfast now!

    I've always liked pickles but have been eating them much more often than usual - like every single day. ; ) Suddenly, for some reason (pregnancy), they just seem like the most perfect food!!!

    And our twins are fraternal, which is quite common when you conceive through IVF.

We had sooo many cucumbers we didn't quite know what to do... well pickles it was and it looks like pickles it will be for us for the next couple years! have lots now in my pantry... they are yummy though...

  54. Ha! That old wives tale about pickle cravings during pregnancy was true for me in my second pregnancy. I craved pickles (LOTS of them) and orange juice (in the same meal), lol! I enjoy your blog so much. How are you feeling these days?

    Feeling good - eating lots of pickles!!! The great thing about these homemade ones is that there's no salt! Compared to the store bought salty ones, I figure they're a guilt-free pleasure!

  56. Oh this takes me back to one of my pregnancies Trina (just can't recall which one though!). Pickles are called gherkins Down Under & I had a shocking desire for gherkins in a slice of that awful processed plastic cheese all shoved into a slice of terribly unhealthy white bread at 3a.m. Your pickles look totally delicious though - they would get the Food Police's big tick of approval.
